This meatloaf is simple to make but, even better, you only have to wash one pan afterwards.

Ingredients:

  • 1 tbsp extra virgin olive oil










  • 1 brown onion, finely chopped










  • 2 garlic cloves, crushed










  • 1 zucchini, grated










  • 1 carrot, grated



















  • 1/2 cup panko breadcrumbs










  • 1/4 cup chopped fresh flat-leaf parsley, plus extra leaves to serve










  • 1/4 cup MasterFoodsⓇ Barbecue Sauce










  • 2 tbsp worcestershire sauce










  • 1 egg, lightly beaten










  • 2 tsp fresh thyme leaves










  • Extra 2 tbsp MasterFoodsⓇ Barbecue Sauce










  • 2 tbsp honey










  • Mixed Salad, to serve

4 Method Steps






  • Heat oil in a 23cm round (base) frying pan over medium-high heat. Cook onion, stirring occasionally, for 5 minutes or until softened. Add garlic. Cook for 1 minute or until fragrant. Transfer to a large bowl. Set aside for 10 minutes to cool.





  • Preheat oven to 180C/160C fan-forced.





  • Squeeze excess moisture from zucchini and carrot. Add to onion with mince, breadcrumbs, parsley, barbecue sauce, worcestershire sauce, egg and thyme. Season with salt and pepper. Using hands, mix until well combined. Press mixture into frying pan. Bake for 30 minutes or until meatloaf is cooked through. Carefully drain excess liquid from pan.





  • Turn grill on medium heat. Combine extra barbecue sauce and honey in a small bowl. Brush half of the honey mixture over meatloaf. Grill for 5 to 8 minutes, brushing with remaining honey mixture halfway through, until top of meatloaf has brown and caramelised. Sprinkle meatloaf with extra parsley and serve with salad.
