Ingredients:

80ml (1/3 cup) extra virgin olive oil
1 tbsp apple cider vinegar
65g (1/4 cup) whole egg mayonnaise
2 tbsp creme fraiche
1 tbsp wholegrain mustard
1 tbsp milk
3 green shallots, thinly sliced
1/4 cup coarsely chopped fresh continental parsley
2 tbsp coarsely chopped fresh dill
200g rindless shortcut bacon, coarsely chopped
2 tbsp drained capers

Place potatoes in a large saucepan of cold water. Cover, bring to the boil over high heat. Uncover. Simmer rapidly for 15 minutes or until a skewer inserts easily.
Preheat a barbecue grill on high. Drain the potatoes. Set aside to cool. Cut lengthways into 1.5cm thick slices. Transfer to tray. Drizzle with 3 tablespoons oil. Season.
Barbecue potato slices for 2-3 minutes each side, until crisp and slightly charred. Return to tray. Drizzle over vinegar. Set aside to cool completely.
Meanwhile, combine the mayonnaise, creme fraiche, mustard and milk in a bowl. Season. Combine the shallot, parsley and dill in a separate bowl.
Heat remaining oil on a barbecue flatplate. Add bacon. Cook, tossing, for 3-4 minutes or until golden and crisp. Add capers. Barbecue for 1 minute or until crisp.
Arrange half the potato on a serving platter. Drizzle with half the dressing. Sprinkle with half the bacon mixture and half the herb mixture. Repeat the layers.
