Ingredients:

  • 2 tsp olive oil










  • 1 red onion, finely chopped










  • 500g Coles Australian Free Range Pork Mince










  • 40g Mexican seasoning










  • 250g Mexican sauce or salsa










  • 400g can black beans, rinsed, drained










  • 12 small flour tortillas










  • 227g can pineapple slices in juice, drained, finely chopped










  • 1/4 cup coarsely chopped coriander










  • 1 long red chilli, seeded, finely chopped










  • Butter lettuce leaves, to serve










  • 1 carrot, peeled, cut into matchsticks










  • 1 avocado, stoned, peeled, finely chopped










  • Sliced red chilli, to serve (optional)









  • Select all ingredients

4 Method Steps






  • Heat the oil in a frying pan over medium heat. Add the onion. Cook, stirring, for 5 mins or until onion softens. Add the mince. Cook, stirring with a wooden spoon to break up any lumps, for 5 mins or until mince changes colour and is cooked through. Add the Mexican seasoning. Cook for 1 min or until combined. Add the Mexican sauce and beans. Cook for 3 mins or until heated through and sauce thickens.





  • Meanwhile, heat the tortillas following packet directions.





  • Combine the pineapple, coriander and chilli in a small bowl.





  • Divide lettuce, mince mixture, carrot and avocado evenly among tortillas. Sprinkle with pineapple salsa. Serve immediately with extra chilli, if desired.
